This unfiltered first press combines a blend of Spanish and Italian varietals for uniquely vibrant, green, and peppery brightness — balanced by softer fruit notes. Ideal for dipping or finishing, with a high smoke point of 420°F, making it versatile for cooking.

Our organic olives are grown in sun-soaked California valleys by small, family-owned farms. The chill of early winter brings the annual olive harvest, with the sweet richness of fresh pressed olives filling the air from November to January.  Each olive varietal is selectively picked by hand and cold-pressed immediately to ensure critical freshness and rich antioxidant and polyphenol content.

Our olives are grown on a multi-generational family-run farm, and are hand-selected at peak ripeness then pressed immediately to ensure critical freshness. This farm operates with organic, sustainable and biodynamic principles, honoring the link between people, the land, and the community. The paste from pressing olives is turned into natural compost tea to fertilize the trees and benefit pollinators. They also irrigate their groves with water from their pond, which is rich in soil-beneficial micro-organisms.
